Cavatelli Crab Salad

  • 1 Lb. Imitation Crabmeat- Chopped
  • 1 Celery Stalk – Diced
  • 1 Small Onion – Diced
  • 2 Carrots – Shredded
  • 2 Heaping Tsp. Mayonnaise
  • 1 Bottle Red Wine Vinaigrette
  • 1 Tbs. Each – Dill Weed, Basil & Parsley
  • 1 Heaping Tsp. Brown Mustard
  • 6-7 Drops of Hot Sauce
  • Salt & Pepper to Taste

Cook P&S Cavatelli in boiling salted water –drain over cold water and set aside. Add celery, carrots and onion. Incorporate mayo – enough to coat pasta. Add dry seasonings, mustard and hot sauce. Mix together. Now add the chopped crabmeat. Top with red wine dressing to your taste. Mix and let sit in fridge for a few hours, or overnight. Moto bene – Enjoy!
